Transform Leftovers into Crispy Mashed Potato Cheese Puffs

These crispy, cheesy mashed potato puffs are the ultimate way to repurpose leftovers into something irresistibly snackable. Ideal as an appetizer, side dish, or party bite—this recipe is quick, versatile, and a family favorite!

Ingredients

2 cups leftover mashed potatoes (cold)

1 cup shredded cheese (cheddar, gouda, or mozzarella)

1 egg

¼ cup all-purpose flour (or gluten-free substitute)

½ teaspoon salt

½ teaspoon garlic powder

¼ teaspoon black pepper

Optional: chopped scallions, cooked bacon, parsley

Optional: breadcrumbs for coating

Instructions

  • In a large bowl, combine mashed potatoes, cheese, egg, flour, and seasonings.

  • Mix until well combined. Add any optional ingredients here.

  • Scoop mixture into 1½-inch balls and roll gently. Flatten slightly if desired.

  • Optional: Roll puffs in breadcrumbs for extra crispiness.

  • Chill puffs in the fridge for 15 minutes before cooking to help them firm up.

  • Bake at 400°F (200°C) for 20–25 minutes, flipping halfway.

    • OR Air Fry at 375°F (190°C) for 12–15 minutes.

    • OR Fry in oil until golden, about 2–3 minutes per side.

Notes

  • Don’t skip the chilling step—this helps prevent the puffs from falling apart.

  • If your mashed potatoes are very moist, add more flour or breadcrumbs.

  • These puffs freeze beautifully! Form and freeze raw, then bake from frozen.

  • Try different cheese combos for unique flavors.
