1 cup peanut butter
1 cup sugar
2 eggs
1 cup milk
2 cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
1 teaspoon vanilla extract
Preheat your oven to 350°F (175°C). Grease a standard loaf pan or line it with parchment paper.
In a large mixing bowl, combine peanut butter and sugar. Beat with a hand mixer or whisk until smooth.
Add eggs and milk, mixing until the batter becomes creamy and well-blended.
In a separate bowl, whisk together flour, baking powder, and salt.
Gradually fold dry ingredients into the wet mixture, stirring gently to combine. Do not overmix.
Add vanilla extract and give a final gentle stir.
Pour batter into the prepared loaf pan and smooth the top with a spatula.
Bake for 50–60 minutes or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
You can mix in chocolate chips, nuts, or swirl in jam before baking for added flavor.
For a fluffier loaf, make sure your baking powder is fresh.
The loaf will rise and crack slightly on top—that’s normal for quick breads.
Store in an airtight container to maintain freshness.
