Juicy, fully cooked sausages are wrapped in fluffy pancake batter, then pan-fried until golden brown and served with warm maple syrup. Perfect for brunch, quick breakfasts, or even meal prep, these hand-held treats are family-friendly and endlessly customizable.

Ingredients

  • 12 beef breakfast sausages, fully cooked
  • 1 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 1 tablespoon melted butter
  • Maple syrup, for serving
  • Skewers or sticks (optional)

Instructions

  • In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, combine buttermilk, egg, and melted butter, then pour into the dry ingredients and stir until just combined.
  • Let the batter rest while you prepare the sausages.
  • If using skewers, insert one into each cooked beef sausage to make dipping easier.
  • Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  • Dip each sausage into the pancake batter, coating it fully.
  • Place the dipped sausages onto the skillet and cook until golden brown on all sides, turning as needed.
  • Remove from heat and place on a paper towel-lined plate to absorb excess oil.
  • Serve warm with maple syrup for dipping.

Notes

  • Use fully cooked sausages to save time and ensure safety.

  • Let the batter rest for 5–10 minutes before dipping for fluffier texture.

  • Stick a skewer through each sausage for easier dipping, flipping, and eating.

  • Adjust seasoning in the batter (like adding cinnamon, nutmeg, or herbs) to suit your flavor preference.

  • Make a big batch and freeze for future breakfasts — they reheat beautifully in the oven.

  • Try different sausage varieties for new flavor combos. Turkey, chicken apple, or even spicy andouille all bring unique twists.

  • Serve with maple syrup, hot honey, or creamy dips to balance flavors.
