A soft, moist cake loaded with warm spices and fresh zucchini—perfect for fall, brunches, or a not-so-guilty dessert. With easy swaps, this recipe can be made vegan or gluten-free. Every bite is cozy, spiced, and totally irresistible. 🍂
2 cups all-purpose flour (or 1:1 gluten-free baking flour)
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1 ½ teaspoons ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
¾ cup light brown sugar (or coconut sugar for refined sugar-free)
½ cup neutral oil (like canola or vegetable oil)
→ Substitute with unsweetened applesauce for lower fat
2 large eggs
→ Vegan? Use 2 flax eggs: 2 tbsp ground flax + 6 tbsp water
1 ½ teaspoons vanilla extract
2 cups grated zucchini (unpeeled, lightly squeezed)
½ cup chopped walnuts or pecans
½ cup raisins or mini chocolate chips
Preheat your oven to 350°F (175°C).
Grease and flour a 9-inch round pan, loaf pan, or bundt pan, or line it with parchment paper.
Grate 2 cups of zucchini using the fine side of a box grater.
Place grated zucchini in a clean kitchen towel and gently squeeze to remove some (not all) moisture. Set aside.
In a large mixing bowl, whisk together:
Flour
Baking powder
Baking soda
Salt
Cinnamon
Nutmeg
Cloves
In a separate bowl, whisk together:
Eggs (or flax eggs)
Brown sugar
Oil (or applesauce)
Vanilla extract
Stir the wet ingredients into the dry ingredients until just combined.
Fold in the grated zucchini and any optional mix-ins like nuts or raisins.
Pour batter into prepared pan. Spread evenly.
Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.
Top with your favorite frosting:
Classic cream cheese frosting
Maple glaze
Simple powdered sugar dusting
No need to peel zucchini — the skin is soft and nutritious.
Want a lighter cake? Use applesauce instead of oil.
For a fun twist, mix in crushed pineapple or orange zest.
This cake is even better the next day after the spices develop overnight.
