  • 2 large eggs
    Vegan? Use 2 flax eggs: 2 tbsp ground flax + 6 tbsp water

  • 2 cups grated zucchini (unpeeled, lightly squeezed)

Instructions

🔧 Step 1: Prep

  • Preheat your oven to 350°F (175°C).

  • Grease and flour a 9-inch round pan, loaf pan, or bundt pan, or line it with parchment paper.

  • Grate 2 cups of zucchini using the fine side of a box grater.

  • Place grated zucchini in a clean kitchen towel and gently squeeze to remove some (not all) moisture. Set aside.

    • Flour
