How to Make the Easiest Brownie Mix Cookies Ever

These easy brownie mix cookies come together in minutes with just a box of brownie mix and a handful of pantry ingredients. With their soft centers, crisp edges, and intense chocolate flavor, they’re the perfect last-minute treat or fun baking activity with kids. Customize them with your favorite add-ins or enjoy them straight from the oven with a glass of milk.

Ingredients

Scale
  • 1 (18–19 oz) box brownie mix
  • 2 large eggs
  • ⅓ cup vegetable oil (or melted butter)
  • ¼ cup all-purpose flour (optional, for thicker cookies)
  • ½ teaspoon vanilla extract (optional)
  • ½ cup chocolate chips or chunks (optional mix-in)
  • Optional add-ins: chopped nuts, white chocolate chips, or crushed candy pieces

Instructions

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, combine the brownie mix, eggs, oil, and optional vanilla extract. Stir until a thick dough forms. Add the flour if you want thicker, more structured cookies.
  • Fold in chocolate chips or any desired mix-ins.
  • Scoop tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 8–10 minutes, or until the edges are set and the centers still look slightly soft.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For thicker cookies, add ¼ cup of flour to the dough.

  • Use melted butter instead of oil for a richer, more cookie-like texture.

  • Chill the dough for 15 minutes if it feels too sticky to handle.

  • Store at room temperature for up to 4 days or freeze for longer shelf life.

  • Add espresso powder for a grown-up twist that deepens the chocolate flavor.
