How to Make the Best Hamburger Steak and Gravy – A Comfort Food Classic

This hamburger steak & gravy is a comforting, Southern-style dish made with seasoned ground beef patties simmered in rich homemade brown gravy. Served hot with mashed potatoes or rice, it’s the perfect hearty meal for any night of the week.

For the Hamburger Steaks:

1 pound ground beef (80/20 recommended)

1/2 cup breadcrumbs

1/4 cup finely diced onion

1 large egg

1 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon black pepper

For the Gravy:

2 tablespoons vegetable oil

2 tablespoons all-purpose flour

1 1/2 cups beef broth

1 tablespoon Worcestershire sauce

Salt and pepper to taste

Optional Garnish:

Fresh chopped parsley

Instructions

Step 1: Make the Patties

  1. In a large mixing bowl, combine ground beef, breadcrumbs, onion, egg, garlic powder, salt, and pepper.

  2. Mix gently until just combined. Do not overmix.

  3. Shape the mixture into 4 oval patties of equal size.

Step 2: Cook the Patties

  1. Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat.

  2. Place patties in the skillet and cook for about 4–5 minutes on each side, until browned and cooked through.

  3. Remove the patties and set aside on a plate.

Step 3: Make the Gravy

  1. In the same skillet, add the remaining tablespoon of oil and sprinkle in the flour.

  2. Stir constantly over medium heat for 1–2 minutes to make a roux, until golden brown.

  3. Gradually whisk in the beef broth and Worcestershire sauce.

  4. Bring to a simmer and cook until thickened, about 3–5 minutes.

  5. Season with salt and pepper to taste.

Step 4: Combine and Simmer

  1. Return the hamburger steaks to the skillet and spoon the gravy over them.

  2. Cover and let simmer on low heat for 5 minutes.

  3. Garnish with parsley and serve hot.

  • Make it gluten-free by using gluten-free breadcrumbs and flour.

  • Add mushrooms or caramelized onions to the gravy for extra flavor.
