How to Make Italian Meatball Lasagna Rollups at Home

These Italian Meatball Lasagna Rollups are a hearty, family-friendly twist on classic lasagna. Packed with tender homemade meatballs, creamy ricotta filling, and layers of marinara and mozzarella, they bake up bubbly and golden for a comforting dish that’s perfect for weeknights, gatherings, or meal prepping. The rollup format makes serving and storing simple, while the rich flavor makes it feel like a special occasion every time.

Ingredients

For the Meatballs:

  • 1 lb ground beef
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

For the Lasagna Roll-Ups:

  • 8–10 lasagna noodles, cooked and drained
  • 1 ½ cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 egg
  • Salt and pepper to taste
  • 1 cup chopped chicken ham (instead of pork ham)
  • 2 cups marinara sauce
  • 1 ½ cups shredded mozzarella (for topping)

Fresh parsley or basil, chopped (optional garnish)

Instructions

  • Preheat oven to 375°F (190°C).
  • In a large bowl, mix ground beef, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper until well combined.
  • Roll mixture into small meatballs (about 1 inch). Place on a baking sheet and bake for 15–18 minutes, or until fully cooked. Set aside.
  • In a bowl, combine ricotta, mozzarella, Parmesan, egg, salt, pepper, and chopped chicken ham. Mix until creamy.
  • Lay out cooked lasagna noodles on a clean surface. Spread about 2 tablespoons of the ricotta mixture over each noodle.
  • Place 2–3 meatballs at one end of each noodle, then carefully roll them up.
  • Spread a layer of marinara sauce on the bottom of a baking dish. Place the roll-ups seam-side down in the dish.
  • Spoon remaining marinara sauce over the top of the rolls, then sprinkle with shredded mozzarella.
  • Cover with foil and bake for 25 minutes. Remove foil and bake for another 10 minutes, until cheese is bubbly and golden.
  • Let cool slightly. Garnish with chopped parsley or basil if desired. Serve warm.
