1 (30 oz) bag frozen shredded hash brown potatoes, thawed

2 cups shredded cheddar cheese

1 cup sour cream

1 can (10.5 oz) condensed cream of chicken soup

1/2 cup melted butter

1/2 cup chopped yellow onion (optional)

Salt and pepper, to taste

2 cups crushed cornflakes (optional topping)

2 tablespoons melted butter (for topping)

1/2 cup cooked turkey bacon bits (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
    Grease a 9×13-inch baking dish and set aside.

  2. In a large bowl, combine the thawed hash browns, shredded cheddar cheese, sour cream, cream of chicken soup, melted butter, onion (if using), salt, pepper, and turkey bacon bits.

  3. Mix well until all ingredients are fully incorporated.

  4. Spread the mixture evenly into the prepared baking dish.

  5. For topping (optional):
    In a small bowl, mix crushed cornflakes with 2 tablespoons of melted butter. Sprinkle evenly over the potato mixture.

  6. Bake uncovered for 45–50 minutes or until hot and bubbly. The top should be golden brown and crisp.

  7. Let rest for 10 minutes before serving.
