Ingredients

Scale
  • 2 large flour tortillas
  • 1 cup cooked chicken breast, shredded
  • ½ cup cooked turkey bacon, chopped
  • ½ cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 2 tablespoons ranch dressing
  • 1 tablespoon butter or oil (for cooking)

Instructions

  1. Lay one tortilla flat and spread ranch dressing evenly over it.
  2. Sprinkle half of the cheddar and mozzarella cheese over the ranch.
  3. Evenly distribute the shredded chicken and chopped turkey bacon on top of the cheese.
  4. Add the remaining cheese over the meat, then place the second tortilla on top to cover.
  5. Heat butter or oil in a skillet over medium heat.
  6. Carefully place the quesadilla in the skillet and cook until the bottom is golden and the cheese starts to melt, about 2-3 minutes.
  7. Flip the quesadilla and cook the other side until golden and all the cheese is melted.
  8. Remove from the skillet, let it rest for a minute, then slice into wedges and serve warm.

Notes

  • Make it your own: Swap ranch for chipotle mayo, add jalapeños for spice, or throw in veggies like spinach or tomatoes.

  • Meal prep friendly: Assemble ahead and refrigerate or freeze cooked quesadillas for future meals.

  • Use leftover chicken: A perfect way to repurpose last night’s grilled or rotisserie chicken.

  • Health tip: Use low-fat cheese, light ranch, and whole wheat tortillas for a lighter version.

  • Serving suggestion: Slice into wedges and serve with dips like salsa, guacamole, or spicy ranch.
